Skillet Dilled Salmon Patties

1 16 oz. can salmon
1/2 cup chopped onion
2 Tbls butter
2/3 cup fine dry bread crumbs
2 beaten eggs
1 tsp dried dillweed
1/2 tsp dried mustard
2 Tbls shortening or cooking
oil
Drain salmon, reserving 1/3 cup liquid. Discard bones and skin from salmon; flake meat. Cook onion in butter till tender, but not brown. Remove from heat. Add reserved salmon liquid, 1/3 cup of the bread crumbs, eggs, dillweed, mustard and salmon; mix well. Shape into 4 patties; coat with remaining crumbs.
In a skillet melt shortening or heat oil. Cook patties over medium heat about 3 minutes ot till browned. Carefully turn; brown other side about 3 minutes more. If desired, spoon Lemon-chive Sauce over patties or serve with lemon wedges or creamed peas.
Lemon-Chive Sauce
2 Tbls butter
2 Tbls all-p flour
1/4 tsp salt
dash pepper
1 cup milk
1 Tbls snipped chives
2 tsp lemon juice
In a small saucepan melt butter. Stir in
flour, salt, pepper, chives and lemon juice. Add milk all at once. Cook
and stir over medium heat till thickened and bubbly. Cook and stir 1 -
2 minutes more. Makes about 1 cup.

Take the bones out of the can of Salmon, or leave them in and crush, if you prefer. Add one egg, chopped onions and enough flour to make it all stick together. Patty out into hamburger size patties amd fry in a little oil until brown. Yummy! We serve with tomatoes and rice.

My dad makes really great salmon cakes. Just a can of salmon, some bread crumbs, an egg, finely chopped onion, salt and pepper (like a meatloaf mixture, just enough of each to give it the right consistency), shape into patties, and fry in a skillet with a drop or 2 of veg. oil.
