Bleu Cheese Walnut Chicken

6 boneless/skinless chicken breasts
1/2 cup crumbled blue cheese
3 T walnuts chopped fine
2 T cream
3 green onions chopped fine
3 T butter
2 finely chopped garlic cloves
1 cup wine of choice

combine cheese, walnuts, green onions and cream. cut a pocket into each chicken breast, put a small amt of cheese mixture in each...secure opening with skewer or pick. In fry pan, combine butter and garlic...saute chicken till done. Remove chicken, add wine...cook for serveral mins till reduced by half. Pour over chicken and serve.

Charna adds:

i do something almost exactly the same (same filling) but instead of making pockets, i thin slice the breasts and pound them, spread the filling, roll them up, tie them up and saute the roll-ups in butter....adding lemon juice at the end..
