Charna Chops

3 center cut chops in a big covered pan....
little bit of oil
a chopped shallot
2 chopped orange plum tomatoes
a big dollop of pureed pumpkin
salt, pepper and a spoonful of brown sugar

Let all that cook for a while, then push it to the side of the pan......raise heat...put in pork chops...brown on both sides, cover chops with the vegetable topping, splash a good splash of white vinegar and a few ounces of water in the pan to deglaze, scrape up...cover pan, and cook for another 10 minutes or so until the chops are done....cracked pepper on top, pour juices over the whole shebang...
