Cucumber Canoes

1 large cucumber peeled
1 cup cooked chopped chicken
1 small onion minced
1 stalk of celery
1/4 cup of yogurt
4 cherry tomatoes.
Mix chicken, celery, onion, and yogurt together. Salt and pepper to taste.
Cut cucumber in half and remove seeds. Fill with chicken salad. Put two cherry tomatoes on each with a tooth pick on each side like oars. -0- this is the oars to the canoes. This is a great lunch and guess what... DIET FOOD, LOW CALORIES and its good.
