Chicken "Homey"
by johnnyb@sj.bigger.net

3 Boneless-skinless chicken breasts
2 Cans Swanson Fat Free Chicken Broth
2 small cans Tomato Paste
2 Green onions (chopped)
1 or 2 Summer squashes or zucchinis
2 Chopped tomatoes
1 Handful crushed red peppers

1 Dash celery salt
2 Shakes of garlic Powder
A Little amount of thyme
1 Tablespoon Black Pepper
1/2 Teaspoon Iodized Salt
About 5 shakes from a Tabasco bottle
1/2 Squeezed lemon (lime works too)

Using a crockpot, set this concoction to simmer, mixing in the chicken broth, tomato paste and seasonings. When it comes to simmer, add the squash (sliced about 1/4" thin and diced into halves), chopped fresh tomatoes and green onions. Cook this down for about an hour (on low-to-medium setting).

Next, chop up the chicken breasts into bitsize pieces (like McNuggets) and add to pot. Let the whole thing simmer on "low" for about 2-3 more hours.

Finally, add rice during the "3rd" hour and occasionally stir until rice is cooked. Makes a ton (6 or more heaping amounts) of servings. Keep a pitcher of water close, depending on how hot ya made it with the Tabasco and crushed red pepper.
