Country Fried Corn Bread

1 C Yellow corn meal
1 C All Self rising flour
1/4 C sugar
1 egg
1 C milk
1/4 oil
1/4 tsp salt
Preheat oven to 350°. A cast iron skillet works the best for this recipe. Drop 3 tbsp of cooking oil into oven safe skillet and place on top rack of oven. Mix corn meal, flour, sugar and salt in large mixing bowl. In a smaller bowl, beat egg and add milk and oil, stirring till well blended. Pour the liquid egg mixture into the corn meal mixture and stir until fully moistened and thick. Remove skillet from oven and pour corn meal mixture into it. Place skillet back into the oven and bake 10-15 minutes or until top is golden brown and peaked.
Serve hot with butter; Serves 6
