Lemon Meringue Pie

1 1/2 c sugar
3 T all-p flour
1 1/2 c hot water
1/2 t grated lemon peel
1/3 c lemon juice
3 egg whites
6 T sugar
3 T cornstarch
dash salt
3 slightly beaten egg yolks
2 T butter or margarine
1 9" baked shell
1 t lemon juice

In saucepan mix 1 1/2 c sugar, cornstarch. flour and salt. Gradually blend in water. Bring to boiling over high heat, stirring constantly. Reduce heat to med; cook and stir 8 min more. Remove from heat.

Stir small amount of hot mixture into yolks; return to hot mixture. Bring to boil over high heat stirring constantly. Reduce heat to low; cook and stir 4 min. longer. Remove from heat.

Add lemon peel and butter. Gradually stir in 1/3 c lemon juice. Cover entire surface with clear plastic wrap; cool 10 min.

Pour into shell. Cool 1 hour.

For meringue, beat egg whites with 1 t lemon juice till soft peaks form. Gradually add 6 T sugar, beating till stiff peaks form and sugar is dissolved. Spread meringue over filling. sealing to edges of pastry.

Bake at 350 12-15 min or till meringue is golden.

Cool before serving.
