DM's Chocolate Eclair Pie

This is the easiest, BEST thing you have EVER put in your mouth and those with kids who love chocolate HAVE to try it!

2 small Vanilla instant pudding
3 cups milk
1 med tub cool whip
1 box graham crackers

Mix pudding and milk to thick; add cool whip and mix. In casserole dish, or deep sheet pan, layer whole graham crackers; 1/2 above mixture; layer of crackers; balance of mixture; top with crackers. Top with chocolate icing.

Chocolate Icing

1 cup sugar
1/3 cup cocoa
1/4 cup evaporated milk
1 stick margarine or butter
1 tsp. vanilla flavoring

Heat sugar, cocoa and milk in a sauce pan, the mixture will be dry. After coming to a boil, boil for one minute. Take off heat and add butter or margarine and vanilla. Mix with mixer until thickened...don't overmix. Pour chocolate over top of pie and chill overnight or for several hours. ENJOY
