Spinach Soufflé
from Renée's Louisiana Recipes


3 Tablespoons flour
3 Tablespoons butter, melted
1/2 teaspoon salt
1 pint cottage cheese
3 eggs, lightly beaten
6 oz cheddar, shredded
1 (10 oz) pkg. frozen spinach, thawed

Preheat oven to 350°. Combine all ingredients in order given. Place in casserole dish. Bake 1 hour.
