BjB's Rice

2 Tbsp. butter
2 Tbsp. olive oil
1/2 cup minced onion
1 cup arborio rice
3 cups chicken broth
1/2 tsp. salt
freshly ground pepper to taste
1/4 cup freshly grated parmesan or romano cheese

Recipe: Note: All cooking temperatures are HIGH and dish is uncovered for all steps.

Melt butter and oil in a deep, flat-bottomed dish uncovered for 2 minutes. Add onions and stir to coat. Cook for 4 minutes. Add rice and stir to coat. Cook for 4 minutes. Stir in broth and cook 9 minutes. Stir well and cook an additional 9 minutes. Remove from microwave and let stand, stirring frequently, for 5 minutes. Stir in salt, pepper and cheese and serve. Serves 4.

To make for 1:

Reduce butter and oil to 2 tsp. each, onion to 1 Tbsp., rice to 1/4 cup, broth to 1 1/4 cups and cheese to 1 - 2 Tbsp.

Melt butter and oil. Add onion and rice together and stir to coat. Cook for 2 minutes. Stir in broth, cook for 6 minutes, stir well, cook another 6 minutes. Remove from oven and let stand, stirring frequently, for 3 minutes. Stir in salt, pepper and cheese. Makes one serving.
