(Roast Scallop Wasabi Flavor)

Every Japanese kitchen has a small fish grill built in the cooking stove. But not a lot of people have real big ovens for baking or roasting, because the space is very much limited. So, the toaster oven is a common item in Japan. You could use the broiler in the oven for this recipe, but I guess it is more economical to use toaster oven if you have one. The forth ingredient Mirin, Japanese sweet sake, is a pretty basic seasoning for Japanese cooking. The real Mirin called Hon-Mirin, is very expensive and hard to get outside of Japan, so you could get Mirin-flavored seasoning from oriental stores. Or, you could add some sugar to regular Sake to substitute.
4 fresh, big scallops
2 fresh Shiitake mushrooms
1/2 Tbsp. soy sauce
1tsp. Mirin
Dash salt
Dash Wasabi (paste or powder)
1) Mix soy sauce, Mirin, salt and Wasabi in a small bowl. Marinate scallops for 10 to 20 minutes in the mixture.
2) Remove the tip of the Shiitake stem and cut in half.
3) Warm up a toaster oven. Line a baking plate with aluminum foil. Put scallops and Shiitake on the plate and roast for 3 to 4 minutes, or until scallops are cooked.
Note) Too much Wasabi can kill the flavor of fresh scallop.
