Scallops With Gin and Grapefruit

Put scallops in saucepan with a couple tablespoons (or even three) of gin. Cover saucepan and bring to boil. Remove from heat immediately.
While scallops are heating, peel, core, and section a grapefruit. Chop a big handful of watercress.
Drain scallops and add a bit of white pepper. Mix in enough melted butter to coat scallops and mix in grapefruit sections. Put in baking / serving dishes. Bake at 350| F for about 5-7 minutes, top with chopped watercress and serve. Take your bows.
