Chicken and Rolled/Cut Veggie Dumplings!

Throw a chicken, or parts thereof, into a large pot. Add several cups of chopped celery (or if your kids HATE cooked celery, put in two or three whole stalks and remove them later) Add water to cover it all, use plenty!

Bring to a boil, then simmer till chicken cooked and very tender. (make sure you add water as needed) Remove the chicken, put somewhere to cool. Add to simmering broth, 2 or 3 sliced peeled carrots, and a small chopped onion.

While chicken cools, mix in a bowl, 1 and a half cups of flour with 1/2 teaspoon poultry seasoning, a dash of salt, a healthy dash of black pepper and slowing start mixing in beaten eggs until you get a dough you can work with. Depending on how wet you air is, it will take 2 or three eggs. Roll the dough out on a well floured board, cut noodles with a pizza or ravioli cutter (or even a knife). let it rest a few minutes. Take out the chicken, pull it off the bone and tear or cut into small pieces. Add it back to the simmering broth. Taste, adding bouillon if needed to get just the "right" taste. Bring to a boil. Drop in the noodles, a few at a time, till all in the soup. Lower heat to simmer, cover and cook for 15 minutes. EAT!
