Prawns With Feta Cheese

1/3 cup olive oil
6 green shallots
3 cloves garlic
1 can whole tomatoes, with juice
1 cup dry white wine
2 tablespoons chopped fresh parsley
2 tablespoons chopped fresh oregano
2kgs uncooked medium prawns, shelled
200gms feta cheese, crumbled

Heat oil in pan, add shallots and garlic,cook stirring,until shallots are soft. Add tomatoes (crush them up),wine and herbs. Bring to the boil, simmer, uncovered, about 15 mins or until thickened. Add prawns, simmer, uncovered until prawns are almost tender, stirring occasionally. Just before serving, divide prawn mixture between 4-6 dishes, sprinkle with feta cheese. Bake in a moderately hot oven about 5 mins or until cheese is just melted. Serve with herbed rice and green salad.
